If you ever happen to open a restaurant that celebrates natural wines with two superstars of the movement, there is a fair chance you will make wine.

Aaron Fenwick is testament to this legacy, opening The Summertown Aristologist with Anton van Klopper of Lucy M and Jasper Button of Commune of Buttons in 2016, and releasing his first Château Comme Ci, Comme Ça wines under the mentorship and winery roof of van Klopper.

Coming from a strong food background in Adelaide, Fenwick has found himself feeling at home in the Adelaide Hills, not only amongst the organic restaurant garden of the Aristologist, but also planting vines himself in van Klopper's Basket Range "Natural Wine Mecca" property, and sourcing fruit from organic growers to make his wines. Fenwick picks his fruit early and keeps maceration of the reds short to to retain acidic crunchiness and freshness in the glass.

Fenwick has learned from his natural wine mentor, with grapes as the only ingredient in the bottle: nothing added, nothing taken away. As Fenwick says himself of his lo-fi wines, "I like to make fun wines to drink with friends, nothing too serious". But we would define Château Comme Ci, Comme Ça as plenty more than "so so".

My wines have and always will be made from 100% grapes, nothing added and nothing taken away. Farmed organically and hopefully in the near future all of our vineyards will be certified organic.
