Bailly Lapierre is a cooperative winery based in the village of Bailly in Burgundy’s Yonne Valley, best known as the birthplace of Crémant de Bourgogne. Established in 1972, the cooperative brings together over 400 local growers, pooling fruit from around 500 hectares of vineyards planted on Kimmeridgian limestone soils—similar to those of nearby Chablis. This chalky terroir lends the wines their hallmark minerality and finesse.
The winery is distinctive for its vast network of underground limestone cellars, once stone quarries, where the Crémants are aged in naturally cool, humid conditions ideal for slow, graceful maturation. Grapes are sourced from classic Burgundy varieties—Chardonnay and Pinot Noir, with smaller amounts of Aligoté and Gamay—vinified using traditional methods of secondary fermentation in bottle.
Bailly Lapierre has become one of the benchmarks for Crémant de Bourgogne, crafting sparkling wines that combine freshness, precision and regional authenticity. Their cuvées are celebrated for offering both excellent value and a clear expression of Burgundy’s northern terroirs, making them a trusted name for méthode traditionnelle sparkling wine.
