Tasting Notes

Another addition to our growing selection of wines made with Palomino. The variety is typically used to produce Sherry but we are seeing more and wines from the region that take Palomino down a different path. This wine is again in large format Jerez barrels and left to age for 8 months, with the juice getting a few months of flor influence too! It’s quite a concentrated, savoury, saline nutty wine, chalky and mineral with great power and drive. - Pete L
