100% Savagnin topped up from a single vineyard called Les Molattes on the famous Jurassic Grey Marl. Manual harvest and wild fermentation in stainless then into old demi-muids for 6 months and bottled with a small amount of sulphur.
Quite a rich and giving Savagnin here but with no shortage of salinity and acidity cleaning it all up. Hay, meadow and lemon. Cheesy, struck match reduction. Nice creamy palate and really enjoyable to drink. - Greg Murphy
