Tasting Notes
COS Naturale Vermouth Rosso is a distinctive Sicilian vermouth born from the collaboration between Giusto Occhipinti of COS Winery and Simone Sabaini of Sabadi Chocolate. Crafted from organic Nero d'Avola grapes, this red vermouth is infused with a secret blend of local herbs and botanicals, resulting in a harmonious balance of sweetness and bitterness.
Aromatic notes of wild herbs and rich Sicilian citrus peel greet the nose, while the palate experiences a blend of red and black berry fruitiness, complemented by brown spices and a touch of alpine herbs. The finish is cool and pleasantly bitter, making it versatile for sipping over ice or enhancing cocktails like the Negroni or Americano. - Aaron C
COS is a pioneering natural winery in Sicily’s Vittoria region, founded in 1980 by three friends—Giambattista Cilia, Giusto Occhipinti, and Cirino Strano—whose surnames form the acronym COS. From humble beginnings in an old family cellar, the estate has grown into one of Italy’s most influential producers of artisanal wines, widely credited with reviving the reputation of Cerasuolo di Vittoria and demonstrating the potential of Sicily’s native varieties.
The vineyards are farmed organically and biodynamically, planted mainly to Frappato and Nero d’Avola, alongside Grecanico, Insolia and Zibibbo. The sandy, limestone-rich soils of Vittoria and the region’s warm days and cooling breezes produce fruit of striking perfume and elegance.
In the cellar, COS is known for its pioneering use of clay amphorae alongside concrete and large neutral oak, with fermentations carried out using native yeasts and no additives. The result is wines of purity, freshness, and subtle complexity, balancing Mediterranean ripeness with restraint and finesse.
Today, COS stands as a benchmark for Sicilian natural wine, celebrated for authenticity, energy, and an unwavering commitment to expressing terroir with clarity and honesty.
