Organically farmed and drawn from the estate vineyard in the Macedon Ranges, this Chardonnay captures the region’s cool precision and natural restraint. Whole-bunch pressed and fermented wild in a 1200L amphora for 12 months on full solids, it spent a further two months in stainless steel before bottling unfined and unfiltered. The result is a pure, quietly textural expression — citrus, white peach and subtle hazelnut tones carried by taut acidity and gentle mineral drive, finishing long and poised with an earthy, amphora-derived calm. - Aaron C
Defialy is the personal wine project of Micah Hewitt, rooted in the Macedon Ranges of Victoria. Micah farms and sources fruit with an emphasis on regenerative and sustainable practices, and he approaches winemaking with a “hands-off, minimal intervention” philosophy—what he playfully calls “minimal fuckery.”
While his home base is Macedon, he also sources fruit from like-minded growers across central Victoria to work with Italian and French varieties less common to his immediate region. His wines include both single-varietal expressions and unconventional blends, often highlighting texture, energy and purity over overt power.
Defialy is known for wines made with native ferments, minimal additions and expressive style—they’re made to enjoy, with emphasis on site and character rather than intervention.
