Eric Bordelet's 2010 Mistelle de Poire is a unique pear-based aperitif from Normandy, France. Crafted by halting the fermentation of partially fermented pear juice with the addition of pear Calvados, this mistelle is then aged in barrels for 10 years without any added sulfur dioxide.
The result is a pale-colored mistelle with remarkable freshness, balanced by ample acidity. With 93 grams per liter of residual sugar, it offers a sweet profile that pairs exceptionally well with pear desserts. - Aaron C
