Tasting Notes
100 % Cabernet Franc from vines averaging 30 years old located in Varrains just north of Saint-Cyr-en-Bourg with sand over Turonian limestone. 100 % de-stemmed and fermented with indigenous yeast in concrete tank for 6 months with a very gentle maceration using infusion and no pump overs and no SO2 until bottling.
Very expressive and perfumed and made in a pure juicy and early drinking style. Very fresh, aromatic and fine with lovely light texture and a hint of peppery freshness and fine gentle tannins. Super attractive now and great drinking and refreshment even in the warmer months. Bottled un-fined and unfiltered. - Importer Note
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
