Tasting Notes
Yon-Dan Shikomi or 4-stage fermentation is relatively rare in sake production, and in this case it gives the sake more body and intensity. This shows a wonderful aroma of mango fruit, impeccable balance of sweetness and acidity on the palate and great depth of flavour. - Matt Young
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
