
Tasting Notes
The wine is comprised of 3 different barrels, the best of 2016. 2 parts Pinot, 1/2 part Syrah. All wines were fermented in stainless steel and spent 7 months each in old Burgundian barrels before being selected and then blended back into stainless steel where the wine spent another 3 months settling before being bottled by gravitiy. The result. A faily serious wine with loads of character and with a vibrancy and purity that belies the sum of its parts.
Momento Mori Wines was born out of a simple desire to make wines that first and foremost have respect for the living. They are crafted with consideration and integrity throughout the entire process. And ultimately (and selfishly) are wines that I wanted to drink.
We work with like minded growers throughout Victoria to source small pockets of high quality fruit that has been nurtured with the same philosophy in mind and we are ever encouraging and striving for more sustainable and natural farming practices.
All of the wines we produce are the definition of hand-made. Small ferments, wild yeast, no oak or mechanical pumps, no fining or filtering and no additions, including no S02 at any stage of wine making or bottling.
