Tasting Notes
Winery Note:
This wine is based on Cabernet Franc, Pineau d'Aunis and Pinot Noir. This grape variety give wine all the personnality of our wine. Specifications for the Cremant de Loire require the strict implementation of the following rules : hand picking in 'comportes' or baskets, which are full of holes so that the grapes are not crushed before being pressed. Champagne-like pressing without chains or helical screw so as to avoid any damaging of the grapes. Our cuvée is made according to the Traditional Method process. Its secondary fermentation on laths and a maturation of 18 months in our troglodyte caves.
Lovely pink tosalmon color. Lively but not agressive, bright in the mouth, slightly acidulous. Lots of red fruits with a bit of pepper. This is great aperitif, but it is tasty enought to match perfectly any white meat and poultry, or even grilled fish. Importer Note
At present, Monmousseau is one of the leading producers of sparkling wines in Touraine. This family owned business started in 1886 has been producing remarkable quality and value 'Methode Traditionelle " sparkling wines from the various central Loire Valley appellations for more than 100 years. Production and ageing is carried out in 15kms of transformed limestone quarries left abandoned after yielding the stone used to build many of the famous Chateaux of the area. The cellar maintains a constant temperature of 12oC and perfect humidity for the aging of sparkling wines. Over time still wines have been added to the range and these are also produced in a fresh, pure, fruit forward style. Monousseau's continued drive for quality combines both modern and traditional techniques, including the 'Methode Tradionelle ", which ensures wines are aged in a horizontal position for over two years following secondary fermentation. - Importer Note
