What a Champagne! One site and 7 varieties planted on it - Arbane, Petit Meslier, Chardonnay and 4 Pinots (Blanc, Gris, Meunier & Noir). The grapes are pressed and fermented in barrels under a rotating solera system. The finished Champagne has no dosage and is slightly golden showing the influence of oxygen ingress over its life. Quince, apples, nuttiness and brioche. The palate is complex and powerful that retains freshness and vitality at the same time. Expect it to soften with more time open. I love delicately decanting this one and serving it in a Burgundy glass. - Chris L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
