Tasting Notes
The top of the Valpolicella food chain if you ask me... and the rest of the wine world. The Valpolicella from Quintarelli is one of the most collected wines from Italy and for good reason. Made from a blend of Corvina, Corvinone and Rondinella, 50% of the grapes are dried prior to fermentation leaving a mark of concentration and fullness on the wine. Intense, structured, full-bodied. Superb! - Chris L
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
