Tasting Notes
Prato Alto is made with the same blend and same vineyards of Occhio al Bianco, Harvested a week later the best grapes are chosen for this wine. The fermentation occurs spontaneously in acacia vat with native yeasts. Grapes are fermented on the skin for about 4 days in stainless still. The maceration on the skin time is based on the kind of grapes and tasting the must during fermentation. Aged in 14hl acacia vat and bottled without any further processing or filtration. Despite the few days of skin contact and low alcohol, the wine shows great character and complexity. Some ripe stone fruits blended perfectly with citrus aftertaste. slightly grippy palate, nice warm feeling and great viscosity overall. Great tapas companion. - Importer Note
The farm and the vineyards are located in Villaga, on the Berici Hills, an area surrounded by woods. We cultivate with organic methods respecting the local terroir. In this way we obtain healthy grapes that can be transformed into wine with spontaneous fermentations and without any additives, filtration or treatments.
The brewery was born in 2017, close to the cellar. It is dedicated exclusively to spontaneous or mixed fermentations. We use microbial flora of our vineyards and of our grapes. Most of our beers are produced using our grapes.
Our purpose, the passion that moves us, is to enhance the territory that hosts us. We want to transform its fruits into a genuine product that is strongly related to the place where it was grown. It's a careful work, full of respect and research, made of the synergies between man and nature.
