Tasting Notes
This wine comprising 80% Sauvignon Blanc and 20% Semillon. Most of the Sauvignon Blanc fruit had 8 hours skin contact prior to pressing. The Semillon component is crushed and pressed immediately after picking. This wine was 100% barrel fermented with predominantly larger barrels used. All went through natural yeast fermentation. The extended lees contact helps fill out the middle palate and gives this wine the extra dimension it is known for.
The nose of the Sauvignon Blanc/Semillon shows bright and fresh citrus with a hint of gooseberry, following through onto the palate the citrus, gooseberry and ripening nashi shine through with crisp, balanced acid, giving the wine great length and a well-rounded lingering finish. - Winery Note
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
