
Tasting Notes
This parcel of Oiry is atypical compared to the rest of the village, carrying a little bit more weight and generosity. The nose includes lemon, lime, bruised apple and salted pastries. The power of this wine is seen in the long, lingering finish which seems to carry on forever. The Champagne would be perfect to pair with food, being able to be drunk almost as a white Burgundy if the bubbles dissipate. - Aaron C.
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
