Thymiopoulos is a family-owned estate in Naoussa, Northern Greece, led by Apostolos Thymiopoulos. Though the family has long grown grapes in the village of Trilofos, Apostolos launched his own label in 2005 after studying oenology, with a goal to interpret the terroir of Vermio’s foothills through the ancient grape Xinomavro. The vineyards—about 34-38 hectares—are farmed organically and with biodynamic practices, with a deep commitment to letting each parcel and each vintage show its own character. Winemaking is minimal intervention: careful wild yeast ferments, judicious oak ageing, and restraint in cellar treatments so that acidity, structure and mineral detail remain front and centre. Thymiopoulos’ wines are celebrated for their elegance, texture, clarity and the balance of fruit and tannin that allows both early pleasure and long-term ageing.
Tasting Notes
Crafted from old-vine fruit in Naoussa, Thymiopoulos Xinomavro showcases a vibrant and expressive character. The bouquet opens with lifted aromas of red cherry, wild strawberry, tomato skins, accompanied by hints of rose petal and subtle spice. The palate delivers juicy red fruits and savoury undertones, balanced by firm yet refined tannins and a lively acid backbone. A long, structured finish lingers, with traces of dried herbs and earthy minerality. - Pete L
