Tasting Notes
Grower Champagne from the southern most area known as the Aube. Every year we chase the wines of Timothee Stroebel and every year we're fascinated by what these wines deliver to you in the glass (a burgundy one if possible). The Triptyque, as the name suggests, is a blend of three varieties - Pinot Noir, Pinot Meunier and Chardonnay. The wine is richer with oxidative cues - honey, baked fruit and dough alongside red berry fruit. It's excellent! Just watch it evolve in the glass as it comes up to temperature (12 degrees is my ideal). Excellent... did you hear me the first time?! - Chris L
