
Tasting Notes
Hand harvested, destemmed and individual berry sorted before being crushed into our Yarra Yering 600kg open fermenters. Hand plunged twice daily until fermentation is complete, some extended time on skins until tannins soften before deciding to press based on taste. Gravity filled to French oak Bordeaux shaped barrels completing malolactic fermentation in the cool underground cellars. 40% new oak, 15 months maturation.
Blackcurrant fruits, iodine interest, bay leaf lift, a wonderful energy, fruit purity and precision. A youthful wine with vibrant acidity, fruit volume, a ripe and fine tannin framework that supports the fruit intensity. - Winemaker Note
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
