
Tasting Notes
Hand harvested, destemmed gently to retain whole berries into a 600kg fermenter for fermentation, hand plunging twice daily. Pressed gently and gravity filled to our underground cellar for malolactic fermentation. Regular racking of the wine to aid the natural clarification over 15 months barrel maturation.
Perfumed with blue and black plum fruits with a hint of cured meat. The palate has beautiful density of fruit, liquorice and a slate-graphite minerality. A wonderful season with plenty of hang time for fruit to gain flavour density but retain an energy and brightness to the palate. A solid framework of oak tannins from 30% new oak perfectly balanced with the intense fruit flavour and a layered texture. The persistence of the elegant flavour profile lingers for an age. - Winemaker Note
Less is more! Minimal intervention or Lo-fi wines encapsulate those producers who keep additions and manipulations to a minimum during the winemaking process. This means the wines are wild fermented, unfiltered and unfined, and only add sulfur during the process.
