Tasting Notes
A blend of Mourvedre, Grenache, Syrah and Cinsault from a biodynamically farmed vineyard that is filled with vines aged between 30-60 years old. It's fermented in stainless steel and then aged in concrete vats for nearly year which puts the focus on the quality of fruit this site produces. The wine has a darker fruit profile driven by the dominance of Mourvedre heading towards ripe plum, blackberry and mulberry with hints of cracked pepper coming from the Syrah. A real bistro wine. - Pete L
Domaine Zélige-Caravent is a highly regarded organic and biodynamic winery situated in the picturesque Pic Saint-Loup appellation of the Languedoc, France. Run by the dedicated couple Luc and Marie Michel since 1999, the estate spans 12 hectares across 22 parcels. Their viticulture practices are deeply rooted in respect for nature, adhering to strict organic and biodynamic certifications. This philosophy extends into their cellar, where winemaking is minimalist, employing spontaneous fermentation with native yeasts and utilizing minimal to no sulfur additions, resulting in vibrant, authentic "natural" wines that are a pure expression of their unique terroir.
The winery is known for its experimental and artistic approach, producing a diverse and captivating range of single-varietal and blended wines using classic Southern French grapes like Grenache, Syrah, Mourvèdre, and Carignan. Each vintage often features distinct labels drawn by Marie Michel, adding a unique, personal touch to every bottle. Key offerings such as the 100% Alicante-Bouschet 'Alcazar', the Cinsault-based 'Marie-Galante', and complex red blends like 'Joli-Coeur' and 'Ellipse' are praised by critics and consumers alike for their freshness, liveliness, and structure, offering charming, rustic, yet elegant profiles.
